What I Ate Today

The beginning of the year is the perfect time to kickstarts any new health habits you've been wanting to try.  I've been fully vegan for almost a year now and have no intentions of ever going back.  Here is what I ate today on my somewhat healthy vegan diet.


Breakfast

Peanut butter and banana smoothie with almond milk and spinach

Lunch

Butter beans, more spinach and my own homemade vegan pesto

Dinner

Minestrone soup

Snacks

Nachos




No a lot of carbs in there but I'm not at the gym today so don't feel like I need as many, plus the nachos would have clocked the carb load up!
