A Winter Vegan Recipe

It's not often I share recipes on here but as you probably know I changed my lifestyle to vegan this year and have been obsessed with the Deliciously Ella books which have helped me so much on my journey to veganism.  They have such simple but yummy recipes that are super easy to make.  I make a lot of them in the evenings and take to work for lunch as I prefer a bigger lunch and smaller dinner.

This is the mashed potato veggie bowl that I slightly adapted to fit with what I had in the kitchen.  I hope you like it and let me know if you'd like more vegan recipes!


Instant mash
Baby corn
Olive oil
Frozen bag of greens (I use Tesco brand)

Add required amount of water to the mash and stir

Add the veggies to a frying pan with a little olive oil and cook for 5 minutes

Place the mash into a bowl and then add veggies on top

It's really that easy!
